Ingredients:
6 Organic Apples
1/2 tsp Organic Cinnamon Powder
1 tsp Organic Pure Vanilla Extract
1-3 tsp Coconut Sugar (optional)
Peel apples
Slice apple cheeks away from core
Cut into 1/2 inch slices
Cut into 1/2 inch dice
Place diced apples into a pot with about 1/2 a cup of water, or just enough to cover the bottom of the pot.
Add 1/2 tsp cinnamon, or generous sprinkle.
Add 1 tsp pure vanilla extract.
Add 1-3 tsp of coconut sugar. (If your apples are especially sweet omit additional sugar).
Bring ingredients to a boil, allow to simmer for several minutes. Check for tenderness, should be fork tender.
Next, check how much water is remaining in pot. If just a little is remaining go ahead and mash apples. They are gonna be hot, so be cautious about splatters from mashing. If you need to drain off a little water, then mash.
You are looking for a pretty smooth consistency with a little bit of chunks left for texture.
